       per 4 persone&lt;br /&gt;   &lt;br /&gt;        240g di carpaccio di manzo&lt;br /&gt;        1 mazzetto di rucola&lt;br /&gt;        80g di parmigiano reggiano&lt;br /&gt;   &lt;br /&gt;        Per la vinaigrette:&lt;br /&gt;        1 cucchiaio di senape&lt;br /&gt;        1 cucchiaio di maionese&lt;br /&gt;        60ml di &lt;a href="http://www.borgodelgusto.it/index.php?page=productdetails&amp;amp;product_id=30"&gt;olio extravergine d’oliva&lt;/a&gt;&lt;br /&gt;        2 lime (succo)&lt;br /&gt;        2 rametti di menta&lt;br /&gt;        1 mazzetto di erba cipollina&lt;br /&gt;        pepe nero&lt;br /&gt;        sale&lt;/span&gt;&lt;/p&gt;                                                         &lt;p style="text-align: center;"&gt;&lt;span style="color:Red;"&gt;&lt;span style="font-family:Tahoma;"&gt;PREPARAZIONE&lt;/span&gt;&lt;/span&gt;&lt;span style="font-family:Tahoma;"&gt;&lt;br /&gt;        &lt;/span&gt;&lt;/p&gt;             &lt;p&gt;&lt;span style="font-family:Tahoma;"&gt;&lt;br /&gt;        Aiutandovi con un coltello ben affilato, preparate le scaglie di parmigiano.&lt;br /&gt;        Mondate e lavate la rucola, asciugatela bene quindi tagliatela grossolanamente.&lt;br /&gt;        In una ciotola riunite la maionese e la senape, versate a filo l’&lt;a href="http://www.borgodelgusto.it/index.php?page=productdetails&amp;amp;product_id=30"&gt;olio&lt;/a&gt; e il succo di lime, mescolando continuamente con una forchetta.&lt;br /&gt;        Aggiungete le erbe tritate e 1 pizzico di sale.&lt;br /&gt;        Suddividete la carne nei piatti, aggiungete la rucola e il parmigiano e condite con un pò di vinai grette.&lt;br /&gt; La specie destinata alla produzione del vino è la Vitis Vinifera, nella sottospecie Sativa. Quest’ultima è nota anche come “vite nostrana” o “europea” per distinguerla dalla vite “americana” che dà frutti di scarsa qualità e che per legge non può essere coltivata ai fini della produzione del vino. Oggi, della vite americana, si utilizza la base come innesto per la vite europea (vedi oltre sezione dedicata agli impianti).&lt;/span&gt;&lt;/span&gt;&lt;/div&gt; &lt;div style="text-align: justify;"&gt;&lt;span style="font-family:Tahoma;"&gt;&lt;span style="font-size:larger;"&gt;La pianta della vite presenta due parti:&lt;/span&gt;&lt;/span&gt;&lt;/div&gt; &lt;div style="text-align: justify;"&gt;&lt;span style="font-family:Tahoma;"&gt;&lt;span style="font-size:larger;"&gt;- apparato sotterraneo radicale o ipogeo (le radici )&lt;/span&gt;&lt;/span&gt;&lt;/div&gt; &lt;div style="text-align: justify;"&gt;&lt;span style="font-family:Tahoma;"&gt;&lt;span style="font-size:larger;"&gt;- apparato esterno o epogeo ( formato da fusto, tralci e foglie).&lt;/span&gt;&lt;/span&gt;&lt;/div&gt; &lt;div style="text-align: justify;"&gt;&lt;span style="font-family:Tahoma;"&gt;&lt;span style="font-size:larger;"&gt;Dopo la fase di quiescenza invernale, la ripresa vegetativa si manifesta all’inizio della primavera con il cosiddetto pianto, cioè la fuoriuscita di linfa dai rami appena potati. In Aprile si ha la chiusura delle gemme, che sono miste, originando sia i grappoli che i germogli.&lt;/span&gt;&lt;/span&gt;&lt;/div&gt; &lt;div style="text-align: justify;"&gt;&lt;span style="font-family:Tahoma;"&gt;&lt;span style="font-size:larger;"&gt;Questi ultimi, terminata la fase vegetativa, lignificano e diventano tralci con i loro nodi, alternativamente ai quali si dispongono le foglie ed altre gemme.&lt;/span&gt;&lt;/span&gt;&lt;/div&gt; &lt;div style="text-align: justify;"&gt;&lt;span style="font-family:Tahoma;"&gt;&lt;span style="font-size:larger;"&gt;Le gemme possono essere di diversi tipi:&lt;/span&gt;&lt;/span&gt;&lt;/div&gt; &lt;div style="text-align: justify;"&gt;&lt;span style="font-family:Tahoma;"&gt;&lt;span style="font-size:larger;"&gt;- pronte ( se si aprono subito,ma danno origine a rami improduttivi)&lt;/span&gt;&lt;/span&gt;&lt;/div&gt; &lt;div style="text-align: justify;"&gt;&lt;span style="font-family:Tahoma;"&gt;&lt;span style="font-size:larger;"&gt;- ibernanti (si aprono nella successiva primavera, producendo fiori e frutti)&lt;/span&gt;&lt;/span&gt;&lt;/div&gt; &lt;div style="text-align: justify;"&gt;&lt;span style="font-family:Tahoma;"&gt;&lt;span style="font-size:larger;"&gt;- latenti ( rimangono inattive anche anni e si sviluppano solo in casi di necessità, come &lt;/span&gt;&lt;/span&gt;&lt;/div&gt; &lt;div style="text-align: justify;"&gt;&lt;span style="font-family:Tahoma;"&gt;&lt;span style="font-size:larger;"&gt;               danni alle altre gemme o condizioni climatiche sfavorevoli).&lt;/span&gt;&lt;/span&gt;&lt;/div&gt; &lt;div style="text-align: justify;"&gt;&lt;span style="font-family:Tahoma;"&gt;&lt;span style="font-size:larger;"&gt;Nel periodo tra fine Aprile ed inizio Giugno, a  seconda delle regioni, inizia la fioritura&lt;/span&gt;&lt;/span&gt;&lt;/div&gt; &lt;div style="text-align: justify;"&gt;&lt;span style="font-family:Tahoma;"&gt;&lt;span style="font-size:larger;"&gt;e la conseguente impollinazione che porta al frutto, ossia l’acino o bacca.&lt;/span&gt;&lt;/span&gt;&lt;/div&gt; &lt;div style="text-align: justify;"&gt;&lt;span style="font-family:Tahoma;"&gt;&lt;span style="font-size:larger;"&gt;L’impollinazione avviene grazie all’azione di vento ed insetti, che trasportano il polline dalle antere (sacchetti presenti in cima agli stami, che rappresentano l’androceo o apparato maschile del fiore) all’ovario, contenuto nel gineceo o pistillo,&lt;/span&gt;&lt;/span&gt; &lt;span style="font-family:Tahoma;"&gt;&lt;span style="font-size:larger;"&gt;che rappresenta l’apparato genitale femminile del fiore. La trasformazione del fiore in &lt;/span&gt;&lt;/span&gt;&lt;span style="font-family:Tahoma;"&gt;&lt;span style="font-size:larger;"&gt;frutto è detta allegagione.&lt;/span&gt;&lt;/span&gt;&lt;/div&gt; &lt;div style="text-align: justify;"&gt;&lt;span style="font-family:Tahoma;"&gt;&lt;span style="font-size:larger;"&gt;Alcune infiorescenze anziché originare grappoli si possono allungare e trasformare in viticci. Questo fenomeno di autoregolamentazione della pianta, che avviene in base alle disponibilità nutritive della stessa, è detto filatura. Oltre a questo fenomeno si possono verificare anche la colatura, cioè la perdita di una certa quantità di fiori e &lt;/span&gt;&lt;/span&gt;&lt;span style="font-family:Tahoma;"&gt;&lt;span style="font-size:larger;"&gt;l’acinellatura, ossia la mancata maturazione di alcuni acini che restano piccoli e privi di semi.
